When I woke up this morning my bedroom was freezing and the reality
of cold weather set in. I have spent most of the last month of
November with family, hunting and cooking on the Big Green Egg. I
walked outside and saw the frost was covering the ground and my first
thought was it's time, time to go fishing. Some of you might question
my thoughts especially you hunters, but from the first of December
through February is one of my favorite times of the year. The fish are
concentrated and eating. They all look like footballs by now and
usually weigh a pound more than they did in the summer time. My
favorite baits to use are a 3/4 oz. white spoon, Spinner bait,
Jerkbait, Flipping, 3/4 oz. football head jig, Shad Rap, and most of
all a big swim bait.
If you are feeling the fever to get out and go fishing don't let
the cold bedroom put you back in bed. Get up, put allot of clothes on,
grab some coffee and get out there. I'm sure you'll be successful and
it will cure your fishing fever.

Recipe of the month-
Brine it and then Smoke your Turkey
One lb. of kosher salt, one gallon hot water, one cup molasses, two
cups honey, a little sage, and a little red pepper. Pour over ice
water to cool it down. Place turkey in the bucket neck down. Place in
refrigerator for twenty four hours.
Dry off your turkey and rub down with olive oil. Use whatever
seasoning you like just use allot of it. Fill the cavity of the turkey
with hot sauce like Texas Pete.
Heat your Big Green Egg up to 280 degrees and cook until your
turkey reaches 165 degrees. (check temp. inside the breast keeping the
probe off the bone. It usually takes six hours).
I like to rest my turkey inside a cooler for ten to twelve hours.
It will still be warm and you can handle the meet without burning your
hands.
